A low-carb dough cracks when it’s rolled thin because holding together and resisting a tear turn out to be two separate jobs, and most keto substitutes only do the first one. A dough can be perfectly cohesive — no crumbling, no falling apart in your hands — and still have nothing that lets it stretch…
Paneer doesn’t melt because acid is what sets it, and a cheese pushed to a high acid level loses so many calcium bonds that its casein (the main milk protein) locks together directly, too tightly to stretch when heated. Mozzarella gets a smaller, calibrated dose of acid. That loosens the calcium bridges in its casein…
Xanthan gum and guar gum both thicken, but neither does psyllium’s job of forming a gel that holds a dough together. Xanthan is shear-thinning: thick at rest, thinner when stirred or worked, even at very low concentration. Guar builds viscous solutions with comparatively little gelling strength of its own, so it thickens a liquid without…
Soluble fiber dissolves in water and can form a gel; insoluble fiber doesn’t dissolve, and mainly adds bulk. In keto flours that split predicts which one can bind and which one only holds water. Psyllium husk’s fiber is mostly soluble, coconut flour’s is mostly insoluble, and flaxseed sits in between. This post sits in the…
On the glycemic index, chickpeas sit far lower than refined wheat: published tables put boiled chickpeas at roughly twenty-eight on the hundred-point glucose scale and white wheat bread at roughly seventy-five. That index measures how fast a food’s carbohydrate raises blood glucose, not how much carbohydrate the food contains. So it doesn’t replace a net-carb…
The Maillard Reaction post traced why almond flour browns faster than wheat: more free amino acids, more reducing sugar, so the same browning chemistry runs harder once the pan gets hot. That post treated browning purely as a flavor-and-color story. It has a less friendly side road. Where the Oil Goes closed by promising the…
Most of the oil a fried food ends up carrying goes in after it leaves the fryer, not while it’s in the oil. While the food is still steaming, its escaping water keeps oil at the surface; once it comes out and cools, a pressure difference pulls oil inward through the small pores of the…
What Gluten Does explained why a papdi or a samosa shell needs a disulfide-bonded protein network to roll thin and crisp in the first place. That’s a story about structure at the moment of frying. It says nothing about what happens an hour later, once that crisp shell is sitting next to chutney or yogurt…
Starch Gelatinization: Why Potato Turns Soft left one question open: whether cooling that same gelatinized starch back down changes its structure enough to affect the carb count. It does change the structure — the mechanism has a name, and it runs in the opposite direction from gelatinization. The question worth asking is whether that change…
Why Traditional Chaat Breaks Keto named the job potato is doing in a tikki or an aloo chaat: “starchy bulk and a specific soft, mashable texture that binds fillings and holds shape when formed into a patty.” What it didn’t explain is why raw potato is firm and cooked potato is soft in the first…
